Mourad Mazouz took an eighteenth-century Mayfair building in 2002 and filled it with several different restaurants and bars, each with its own design commission, and a three-star chef in the kitchen upstairs ⚑.
2 · Why it matters
Sketch invented a format that London has been copying ever since: the hospitality building rather than the restaurant. One address, several rooms, each with a distinct identity, and a rotating art programme — the Gallery's commissioned interiors have been replaced several times, each becoming a photographed destination in itself ⚑.
It is also the clearest predecessor of the art-commission strategy recorded at Sexy Fish, and it did it with an art-world rather than a market logic: the commissions were curated, not bought as decor.

4 · What this house does not solve
A building of several concepts is several businesses, each with its own risk, sharing one reputation.
The rotating art programme requires continual investment simply to maintain novelty — the treadmill that any photographed interior sets running.
And the food has always been in tension with the spectacle: a three-star kitchen upstairs is not what most visitors come for, which is an expensive way to hold credibility.
