Hangar-7

1 · POSITION

Hangar-7 opened at Salzburg Airport on 22 August 2003, bringing aircraft, architecture and dining into one destination. Dietrich Mateschitz's project gave the Flying Bulls a glass-and-steel home designed by Volkmar Burgstaller. The restaurant Ikarus added a changing culinary programme, making the building a place to spend an evening as well as to look at machines. [1, 2]

2 · AN INHABITED HANGAR

The structure had to admit the collection's large aircraft while leaving the principal interior free of supporting columns. Bars, restaurant spaces and circulation were incorporated into the design. The building consequently places hospitality within the spectacle of the hangar: movement through it changes the relationship between the visitor, the exhibits and the surrounding airfield. [1]

3 · THE VISITING KITCHEN

Ikarus developed its guest-chef programme under Eckart Witzigmann's patronage. International chefs contribute menus that change on a monthly rhythm. This makes the restaurant a host to other culinary identities, while its own identity rests on the selection, preparation and consistent delivery of those changing experiences in Salzburg. [2]

4 · THE TEAM THAT STAYS

Executive chef Martin Klein visits the guest chefs' kitchens and prepares his resident team for each menu. That work is the programme's less visible foundation: ingredients, techniques and intentions must survive translation into another kitchen. The calendar also makes room for the Ikarus team's own cooking, including its documented August 2026 programme. [2, 3]

5 · ⚑ CANDOUR

⚑ A guest-chef menu does not mean that the named visitor personally cooks every service for a month. The permanent team is essential to the model, and the calendar includes its own presentations. Hangar-7, the restaurant and the aircraft collection are connected parts of the destination, but their authorship and day-to-day responsibilities should remain distinct. [1–3]
