1 · Opening

Vittorio Cerea opened a restaurant in Bergamo in 1966. Sixty years later his children run it at three Michelin stars, and the house has become one of the few Italian dining dynasties operating internationally.

2 · Why it matters

The Library records a distinction that Italy makes better than anywhere: the difference between a chef's restaurant and a family's restaurant. Da Vittorio is unmistakably the second. Several siblings hold different parts of the operation, the dining room is run with the same seriousness as the kitchen, and the signature dish is a pasta finished at the table rather than a statement of technique.

Its expansion is equally instructive: not a network, but a small number of houses in places where the family can be present — including inside luxury hotels in Shanghai and the Engadine ⚑. This is the Italian answer to the chef empires recorded elsewhere in this Part, and it scales in a different unit: relatives, not licences.

Paccheri alla Vittorio, finished in the room; a trolley culture; service by family members. The kitchen is technical, the presentation deliberately domestic.

4 · What this house does not solve

A family model has a hard limit: it can only open where a family member can stand. That is a discipline and a ceiling.

Three stars are a burden as well as an asset — the cost structure they require is difficult to reproduce in the satellite locations, which must therefore be something other than the mother house without appearing lesser.

And succession, which has worked once, has not yet been tested twice: the second generation inherited from a founder, the third will inherit from siblings, which is a materially harder transition.
