Niko Romito is self-taught, cooks in a converted monastery in Abruzzo, and holds three stars there. He is also the author of the dining rooms of every Bulgari hotel in the world.
2 · Why it matters
This is a structure no other entry in this section shares. Puck, Vongerichten and Boulud supply many hotel groups; Romito supplies one, exclusively, and the arrangement makes him the culinary identity of an entire luxury brand rather than a name on one of its restaurants.
For a hotel group, this is the strongest version of the chef partnership: consistency, authorship and a single relationship. For the chef, it is a bet on one partner's expansion — and Bulgari has been expanding.
His third activity deserves recording: a training programme for young cooks that has professionalised a generation of Italian kitchens ⚑, which is the kind of contribution the Library values more highly than a star count.

Exclusivity with one partner is a concentration risk of the purest kind: the empire's geography is decided by another company's development pipeline.
A doctrine of simplicity is the hardest thing to reproduce at distance — there is nothing to hide behind when a dish has four elements.
And the mountain house that generates the credibility is small, remote and personally cooked; the empire depends on a room that the empire's guests will mostly never visit.
