Jeff Zalaznick

Jeff Zalaznick formed Major Food Group with Mario Carbone and Rich Torrisi in 2010, according to Cornell’s contemporary account. His contribution was to help turn a successful chef-led restaurant into a business capable of creating several distinct dining concepts. His entry rests on that work rather than a chef’s credential. 2 · FROM ADJACENT BUSINESSES TO RESTAURANTS

Zalaznick studied psychology at Cornell and first worked in investment banking. In his interview with Alain Elkann, he described later experience in hotels and food websites before deciding to build restaurants themselves. He met Carbone and Torrisi after their first establishment had opened. [1, 2]

3 · A SECOND FORMAT

Parm opened in 2011. Cornell’s account places it alongside the transformation of Torrisi Italian Specialties into a tasting room. The development separated the casual and more elaborate strands of the original business, allowing each to have its own setting and audience. [1]

In the Institute of Culinary Education interview, Zalaznick described replication as part of the intention for Parm from the beginning. Expansion was consequently a design question embedded in the concept, rather than merely a response to later demand. [3]

4 · SHARED AMBITION

Zalaznick’s interview with Elkann identifies the partners’ common idea of the restaurant they wanted to create as central to the relationship. Carbone, opened in 2013, became a major expression of that ambition. The business partner’s work involved concept and judgement as well as money; it still depended on the culinary practice of the other founders. [2]

⚑ The late-2009 opening of Torrisi Italian Specialties and the 2010 formation described by Cornell are separate events. Neither date should silently replace the other. The interviews present the partners’ recollections, not an audit of ownership or finances. Zalaznick’s authorship remains collaborative and does not displace the chefs, designers and operating teams responsible for individual venues.
