2 · TWO SERVICES IN ONE SPACE

The original business combined daytime deli service with a more elaborate evening meal. Hospitality Design’s account describes the two chefs leaving established restaurant positions to work together on that format. A small space could serve two different occasions, allowing the project to test more than one relationship with its public. [2]

3 · A SHARED CULINARY LANGUAGE

In the founders’ interview with the Institute of Culinary Education, Torrisi described Italian-American food and New York upbringing as common ground among the partners. That shared language was the foundation for collaboration, not proof that their roles were interchangeable. [3]

4 · RETURNING TO THE NAME

The Culinary Institute of America dates the later restaurant Torrisi to 2022 and describes his wider responsibility for research, menu development and mentoring. The new eponymous address revisited the early idea at a different stage of the group’s development. The role also extended beyond a single dining room into the practical transmission of a culinary approach. [1]

5 · ⚑ CANDOUR

⚑ Torrisi Italian Specialties and the later Torrisi are related projects with different opening dates. They should not be treated as an uninterrupted operation in one form. The principal accounts include institutional profiles and interviews with the founders, so their descriptions of influence are read as attributed assessments. The entry recognises Torrisi’s work within the partnership rather than claiming the group’s complete portfolio as his individual creation.
