Canaves began in 1985 when the Chaidemenos family converted 17th-century canava wine cellars on the Oia cliff into guest accommodation, giving the collection both its name and its founding fabric. Four decades later the family operates four properties in Oia — Canaves Oia Suites, Canaves Oia Sunday Suites, Canaves Epitome and the Canaves villas — positioning itself as the village's contemporary-luxury interpretation of the caldera stay. The collection remains family-owned, Oia-concentrated and deliberately compact.
The brand
Canaves is the third of Oia's founding hotel families, alongside Katikies and Andronis, and the one that has moved furthest toward contemporary design. The original Suites occupy the historic canavas; Sunday Suites refines the cliff product; Epitome, at Oia's edge by Ammoudi Bay, is a purpose-built low-rise resort with the village's largest suites and a yacht-club sensibility.
The family's strategy is depth in one village: rather than expanding to other islands, Canaves layers Oia positions and formats. Service is personal and generationally continuous — guests are hosted by the same family that converted the cellars.
Brand philosophy
Canaves treats its heritage fabric as the starting point, not the style. The canava cellars anchor the brand's story, while the design language has evolved toward clean contemporary luxury — white and stone, but with modern proportions, pools and furniture rather than folkloric decoration.
Epitome expresses the second belief: that Oia luxury can have space. Built outside the congested village core with sea-level access toward Ammoudi, it offers what the cliff cannot — large suites, privacy and arrival by car — while remaining ten minutes from the sunset crowds.
What distinguishes it
The name is the building. Canava wine cellars from the 1600s are the founding fabric — heritage that Oia's newer entrants cannot claim.
Contemporary within the vernacular. Canaves reads as the most design-forward of the Oia families, modernising the white vocabulary rather than preserving it as folklore.
Epitome solves the cliff's limits. The edge-of-village resort provides space, access and calm that caldera-core properties structurally lack.
Villas complete the ladder. From suite to full villa buy-out, the family covers every private-stay format in one village.

Canaves is a weak fit for travellers seeking multi-island itineraries under one brand, family-with-children programming or isolation from Santorini's season. As with all Oia luxury, the village is crowded at sunset and the cliff properties involve stairs. Guests wanting the most traditional cave-suite romanticism may prefer the older vocabulary of neighbours; Canaves' register is contemporary polish.
