2 · A CHEF'S STARTING POINT

Saini trained under Manish Mehrotra of Indian Accent in Delhi. In Studio's account, he also connects his interest in produce, herbs and flowers to growing up in an agricultural family. Those two influences give the restaurant a more specific foundation than a general ambition to modernise Indian food: professional training meets a personal familiarity with ingredients before they reach the kitchen. 3 · FAMILIAR FOOD, ALTERED FORM

A published account of the restaurant's 2021 menu described pani puri with aerated cumin-scented water, sweet potato, chickpea and preserved lemon. The example shows how a familiar street-food structure can become a tightly staged opening mouthful. It is a historical illustration of Saini's method, rather than a promise that the same preparation remains on today's menu. [3]

4 · THE ROOM AND THE GLASS

The current address is St. Regis Gardens on Palm Jumeirah. Studio's beverage programme, Papadom, was developed with Dom Carella and includes drinks with and without spirits. The restaurant describes cooperation between bar and kitchen to use ingredients and byproducts across both programmes. This extends the tasting format beyond the plate: the sequence can be carried through the glass as well as the food. [1]

5 · ⚑ CANDOUR

⚑ Michelin's 2025 award is a dated milestone, not a substitute for checking subsequent editions. Older menu descriptions and rankings remain historical evidence. Trèsind Studio should not be confused with Trèsind's separate Dubai restaurant or have its stars transferred to another address. [1–3]
