2 · A RESTAURANT REMEMBERED

Nath’s early account began in Patna, where his father had run the Palace Hotel and Restaurant before losing the business. He recalled that interrupted ambition when explaining his own move into dining. It is a personal recollection of a family enterprise, not a documented succession of hotel ownership. The eventual Dubai restaurants were new businesses, not branches of that earlier establishment. 3 · COMMERCE BEFORE COOKING

His route to restaurants passed through trading and shipping in Nigeria. In the account published by Mint, responsibility grew from an initial commercial appointment into leadership of a chartering business. This was an education in organisation rather than a chef’s apprenticeship. The later challenge would be to support a profession whose product he could commission and assess, but did not personally cook. African Fish Company belonged to the earlier chapter. A profile accompanying Sakshi Nath’s interview described its joint establishment with Bhupender in Lagos in 2000; another account placed his frozen-fish venture in the late 1990s. The precise sequence remains unresolved. What must not disappear is Sakshi’s place in the published business history: the restaurant story did not begin with an entrepreneur working entirely alone. 5 · CHOOSING DUBAI

The couple moved to Dubai in 2008, according to Nath’s retrospective interview. The eventual restaurant business grew from that new base. His later account of its purpose stressed giving Indian cooking a more ambitious international setting. The geographical move and that stated ambition are related, but neither establishes that one person originated contemporary Indian fine dining or transformed an entire city’s restaurant culture. Forbes Middle East dated Passion F&B’s founding to June 2014. Trèsind’s own history places the restaurant’s launch in the same year. These are useful published dates for the beginning of this hospitality chapter; they do not constitute a reviewed legal incorporation file. The company provided an organisational frame, while the restaurant gave that frame a public name, a menu and a place to receive guests. 7 · SAKSHI’S FOUNDING CREDIT

Khaleej Times explicitly identified Sakshi Nath as co-founder in its account of Trèsind Studio. In that interview she discussed training, coordination between kitchen and dining room, and the responsibility of the owners towards the team. Her contribution therefore belongs inside the narrative, not only in a family caption. The public record supports shared founding participation without supplying exact equity percentages or a complete division of executive duties. 8 · WHEN THE FRANCHISE PLAN FELL AWAY

Nath recalled that an intended franchise arrangement collapsed shortly before the planned opening in 2014. He proceeded with an independently developed restaurant instead. The account explains a consequential change of direction; it does not establish contractual fault. Himanshu Saini became the central culinary collaborator. The group’s published leadership places Nath as founder and managing director and Saini as corporate chef. Those roles describe a partnership between business development and cooking, not two interchangeable kinds of authorship. The restaurant’s identity depended on a working kitchen and continuing creative decisions, rather than solely on obtaining the right to display a recognised name. Nath’s interviews describe a wish to widen expectations of Indian food. That is an owner’s stated purpose, not proof that every guest changed their opinion. Its practical significance lies in the willingness to support a restaurant where presentation, explanation and unfamiliar combinations could accompany recognisable flavours. The business had to give diners a reason to choose an occasion rather than merely order familiar dishes. The name Trèsind joined a French intensifier to an abbreviation of India. Its official account emphasises contemporary Indian cooking and preparation completed beside the table. That combination made the restaurant a place of encounter between existing food memories and a different form of presentation. 12 · THE TROLLEY AND THE CONVERSATION

Trèsind’s account of guéridon service describes food being finished in the guest’s presence. Read as hospitality, the trolley changes the relationship between preparation and consumption: part of the work becomes visible, and the server has an opportunity to explain it. 13 · A RESTAURANT THAT COULD CONTAIN ANOTHER IDEA

The larger Trèsind and the smaller Studio did not have to promise the same evening. A tasting room can concentrate the sequence of a meal, while an à la carte restaurant preserves more decisions for the diner. Within one business, those formats allow a chef to explore different degrees of control over timing and composition. This is an interpretation of their documented distinction, not a claim about undisclosed profitability. Trèsind Studio opened in 2018 as a small restaurant within the original Trèsind setting. The arrangement allowed a more concentrated culinary experience to develop beside an established operation. The later Palm address must not be carried backwards into that founding year: the restaurant existed before its independent rooftop setting. In the 2022 hospitality-award profile, Saini remembered evenings when Studio had no diners while the neighbouring restaurant was busy. Recognition was not immediate. The episode records the uncertainty of introducing a different format, rather than a success that arrived fully formed on opening night. 16 · AN ADDRESS OF ITS OWN

A firsthand review published on 17 April 2022 described the new Palm location in operation. That observation takes the move beyond an earlier announcement, although the writer disclosed that the visit was invited. The change gave Studio a separate arrival and dining setting. 17 · THE DINING ROOM HAS AN AUTHOR

The World’s 50 Best account named restaurant manager Vipin Panwar as an important partner in developing the service. His work belonged to the connection between the kitchen’s ideas and the guest’s understanding of them. The hospitality award recognised a restaurant experience; it should not erase the professional contribution of the person organising its delivery. 18 · ATTENTION AT THE SCALE OF A GESTURE

The same account described adapting service to a diner’s handedness. Such attention is small enough to disappear in a business profile, yet concrete enough to explain what personal service means. 19 · SEEING THE WORK

Michelin’s 2025 inspector account described a dining room with views towards the kitchen pass. The arrangement let guests see activity without moving into the working area. As a spatial reading, that visibility makes preparation part of the evening while retaining a boundary between audience and brigade. The account documents a visit, not a universal seating plan for every subsequent configuration. 20 · GEOGRAPHY BECOMES A SEQUENCE

The inspector also described a map introducing successive regional passages of the menu. The dinner’s organisation therefore extended beyond recipes into explanation and pacing. This was Saini and the team’s culinary narrative within an enterprise Nath helped sustain. A People card for the owner should show why that environment mattered without transferring authorship of the menu to him. 21 · THE BAR KEEPS ITS OWN CREDIT

Trèsind Studio’s website credits Dom Carella with the cocktail work at Papadom Botanic Bar. The drinks programme extends the visit, but remains a specialist contribution. A group founder can commission a coherent experience while relying on authors with their own disciplines. 22 · THE MICHELIN SEQUENCE

Trèsind Studio received its first Michelin star in 2022 and its second in 2023. In May 2025 the guide awarded the restaurant three stars and identified it as the first Indian restaurant worldwide to receive that distinction. The sequence belongs to a particular restaurant under Saini’s culinary direction, developed over several assessments rather than created by a single awards evening. 23 · WHAT A STAR ESTABLISHES

Michelin states that its stars are awarded to restaurants, using culinary criteria rather than the cost of the interior or the owner’s prominence. Studio’s distinction consequently does not award three stars to Nath personally, to Passion F&B as a whole, or to another Trèsind address. The wider hospitality experience can be discussed on its own evidence, without making the culinary award certify every business claim. 24 · THE ROOM A PASTRY CHEF ASKED FOR

Rahul Rana supplied an unusually precise account of an owner’s decision. He told Michelin that in 2019 he proposed a purely vegetarian restaurant to Nath, who agreed to support it. The proposal came from the chef; permission and backing came from the entrepreneur. Avatara’s origin is strongest when both contributions remain visible. 25 · PRECISION CROSSES THE KITCHEN

Rana described his passage from pastry into savoury cooking as a change of discipline informed by exact recipes and controlled seasoning. The new restaurant offered a professional development route inside the group, not simply another outlet carrying an existing menu. 26 · THE IDEA BECOMES A RESTAURANT

On 22 March 2022, The National reported that Avatara occupied the former Trèsind Studio space at voco, after Studio’s move to the Palm. A room associated with one experiment had become the setting for another. Avatara received its first Michelin star in 2023; Omkar Walve separately received the guide’s Young Chef Award. Its current website names Walve as head chef. Rana’s originating idea, the restaurant’s distinction and later kitchen leadership are three related but different parts of its history. 27 · VEGETARIAN IS THE STARTING POINT

Avatara’s published proposition makes vegetarian cooking the whole meal, not a substitute assembled after a meat menu has been designed. Its Dubai website offers vegan and gluten-free versions on request; the Mumbai description explicitly includes dairy. Vegetarian and vegan are therefore not interchangeable descriptions. 28 · A LARGER SETTING WITHOUT A DIFFERENT PREMISE

By December 2023, Nath was discussing Avatara’s completed relocation to Dubai Hills and the additional possibilities offered by the larger space. The current restaurant page confirms that location. This was development of an existing restaurant, not another founding. More space could accommodate different occasions, but the reviewed sources do not establish that expansion alone improved either the cooking or commercial performance. 29 · MUMBAI HAS ITS OWN KITCHEN TEAM

Avatara’s Mumbai page names Sanket Joshi and sets out his professional background. The location shares a vegetarian direction with Dubai, but has a named person responsible for realising it locally. Replication within a group is therefore a transfer of a restaurant proposition through another team, not evidence that the founder personally reproduces the dishes at every address. 30 · AAMARA’S DIFFERENT REGISTER

Bistro Aamara introduced another frame: food interpreted through the Silk Route. Its website credits executive chef Ritwik Sarkar. A dated menu article from November 2024 documents the restaurant’s culinary offering at that point. The historical project is clear enough to discuss; an undated listing alone is not used here to certify that the restaurant was trading on every day of this research period. 31 · A MENU BUILT AROUND CROSSINGS

The 2024 coverage placed a seafood bouillabaisse with malai curry and other cross-regional combinations alongside retained familiar dishes. This allows a reading of Aamara as an approachable meeting of food references rather than Studio’s tightly directed regional journey. The Silk Route is the restaurant’s conceptual language; it is not, by itself, historical proof that each combination travelled along that route. 32 · CARNIVAL AND THE RECURRING VISIT

Carnival’s DIFC website names Rahil Aga as executive chef and presents several ways to dine: à la carte, a business lunch, a named experience and weekend occasions. That variety addresses repeat use as well as a special evening. The restaurant contributes something different to the group from a small tasting room: guests can choose the scale and purpose of their visit. 33 · DIFFERENT COMMITMENTS OF TIME

A business lunch and an extended tasting dinner require different expectations of the guest. Carnival’s published formats make that distinction practical, not merely a matter of interior style. In the Library’s reading, the portfolio offered a range of commitments of time and attention. 34 · A PORTFOLIO IS NOT A SINGLE CLASSIFICATION

Passion F&B’s public portfolio spans tasting restaurants, broader dining concepts and catering. Nath’s hospitality history should not turn that variety into a claim that every unit is an ultra-luxury restaurant. The owner’s recurring task was to define an occasion, secure a team and maintain an operating platform. The evidence is more informative when the differences between concepts remain legible. 35 · INSIDE A HOTEL, AT A NEW ADDRESS

The November 2022 relocation announcement placed Trèsind’s next home at One&Only Royal Mirage, following its earlier Dubai address. The hotel’s own restaurant page subsequently confirms that setting and describes the restaurant as Michelin-selected. One indexed version of Royal Mirage’s Book Now and Save conditions specified dining savings but excluded Trèsind and Viva La Goa. This is evidence of a particular published offer, not a guarantee of today’s terms: a directly rendered version showed different inclusions. The example illustrates a useful boundary. A restaurant can sit within a resort while having distinct commercial arrangements; an offer does not establish who owns either business. 37 · HOSPITALITY AWAY FROM THE DINING ROOM

Gala by Trèsind presents the group’s food and service for events beyond its permanent restaurants. The setting changes, but the promise still requires a coordinated meal and a host’s occasion. This extension is not another hotel or a fixed tasting room. Trèsind Mumbai’s published team page names Sarfaraz Ahmed alongside Saini and Nath. Read with the company’s leadership page, it distinguishes corporate culinary direction, a local kitchen and business management. The website is not a complete chronology of appointments. It is nevertheless sufficient to resist the misleading picture of one chef and one investor doing all the work across a growing collection. 39 · EXPANSION AS AN OPERATING QUESTION

In his December 2023 interview, Nath discussed research into local demand and working with people who understood each market. Those are stated methods rather than an independent evaluation of every expansion. They address a real problem, however: a restaurant’s menu, occasion and service expectations must make sense where it opens. Signing another address does not resolve that work by itself. Saini described the distinction plainly in July 2026: Dubai’s larger Trèsind combined à la carte and tasting choices, while Mumbai’s 2018 opening focused on a tasting experience. London was another adaptation rather than a direct copy. The group’s expansion thus carried a culinary identity while changing how guests encountered it; it did not require identical menus or identical rooms. 41 · LONDON MOVES BEYOND AN ANNOUNCEMENT

Trèsind Mayfair opened in May 2026, as confirmed by The National’s July reporting. Earlier publicity had described an intended London scheme; the subsequent report documents a restaurant receiving guests. The exported name was Trèsind, not a relocation of Dubai’s Trèsind Studio. Dubai’s three-star distinction was background to the venture, not a Michelin rating automatically transferred to London. The London restaurant’s own page identifies Suyash Nath as chief executive for Passion F&B’s UK and US activities. That geographical remit is more precise than calling him chief executive of every group entity. The record shows a next-generation role in international development, while leaving the wider corporate chart and allocation of ownership to documents not reviewed for this entry. 43 · AMIT BAGYAL IN THE LONDON KITCHEN

Amit Bagyal leads the Mayfair kitchen; The National reported that he had trained at the Dubai restaurant. The London website also names him alongside Saini. That relationship makes the transfer concrete: international growth carried professional learning through a chef, rather than sending only a brand name into another market. An August 2026 report documented the launch of Tryst by the Trèsind Mayfair team and named Marina Juszczyk as its leader. The bar brought its own regional Indian references into the evening. It is a related project with a specialist author, not evidence that Nath created the cocktails or that the restaurant and bar opened on the same day. 45 · SUSHAAN IS ANOTHER NAME IN THE RECORD

A July 2025 interview separately identified Sushaan Nath as chief executive of Passion Cuisine. He discussed 10/10 Burgers and the arrival of Zaatar W Zeit in Mumbai. This is not the same published name or remit as Suyash’s London role. The two records are retained separately rather than reconciled by assuming a spelling mistake or inventing a single global succession. 46 · CREATING AND INTRODUCING ARE DIFFERENT ACTS

The Passion Cuisine interview concerned both a new burger concept and the introduction of an existing Lebanese brand. These are different kinds of entrepreneurship. Local development of Zaatar W Zeit does not make the Nath family the creator of that brand’s earlier history. Nor does a reported family connection establish that every operation sits in an identical legal entity or has the same shareholders. 47 · WHAT WAS REPRODUCED

The clearest repetition is within the group: a chef-led idea receives a defined setting and an operating team, then changes through another venue or market. Trèsind’s market adaptations and Avatara’s separate Mumbai kitchen are concrete examples. They support an account of an enterprise developing a repeatable method. The reviewed evidence does not identify an independent restaurant group that copied a uniquely Nath-authored model.
