1 · Opening
Francesco Procopio dei Coltelli opened a coffee house on the rue des Fossés-Saint-Germain in 1686, opposite the theatre. It is the oldest café in Paris and, by most accounts, the first in Europe to work as a room rather than a stall.
2 · Why it matters
The invention was not coffee. It was the idea that a merchant could sell a seat, light, warmth and company, and that a stranger could occupy a table for hours on the strength of one small purchase. Every lobby, lounge and terrace in this Library is a descendant of that transaction.
Its clientele made the second point: the Encyclopédistes worked here, and the room became a place where opinion was formed rather than merely exchanged. A house that sells time will always be colonised by people who need somewhere to think, and the hospitality industry has been monetising that ever since.
3 · Signature & ritual
Chandeliers, mirrors and small rooms on two floors, a theatre across the street supplying the crowd, and a menu that has long since become a restaurant carrying a café's name.
4 · What this house does not solve
Three hundred and forty years of continuity is an assertion, not a fact: the house closed, moved, changed hands and was reconstructed more than once, and the present interior is a nineteenth- and twentieth-century idea of what it looked like.
The business today is a restaurant trading on a café's history, which is a different product from the one that made it significant.
And a room this old in a street this famous is priced for visitors rather than for the people who once used it — the standing condition of every house in this group.
