1 · Opening
Flore opened on the boulevard Saint-Germain in 1887 and became, in the middle of the twentieth century, the closest thing Paris had to a co-working building.
2 · Why it matters
Sartre and Beauvoir did not visit; they arrived in the morning, took the same tables and worked. The house supplied heat, which their apartments did not, and a tolerance for occupation that no restaurant would extend. That is a hospitality proposition, and an unusually modern one.
It also demonstrates something the industry rediscovered eighty years later. A room that lets people stay produces loyalty no loyalty programme can buy, and the reputational value of who sat there long outlives their bill.
3 · Signature & ritual
The upstairs room, the same tables held for the same customers, waiters in long aprons, and a price for a coffee that is openly rent for the address.
4 · What this house does not solve
The house now sells its own history to people who have come to look at where the writers sat, which is the exact inversion of the function that made it famous.
Its rivalry with Les Deux Magots forty metres away is largely a marketing asset for both, and the register should treat the distinction between them with scepticism.
And a café that trades on intellectual association has no way to renew that association — nobody is writing a philosophy there now, at those prices.
