1 · Opening
Florian opened under the arcades of Piazza San Marco in 1720 and has served coffee there ever since. It is older than every hotel in the main register, older than most of the states its guests came from, and it has never moved.
2 · Why it matters
The Venetian café was the first European hospitality form to sell time rather than sustenance. A guest bought a small coffee and the right to sit in the most valuable square in Europe for as long as the conversation lasted — the ancestor of every lobby, lounge and terrace the Library records.
Florian carried that function through the Republic's fall, Austrian occupation, unification and two wars. Casanova, Byron, Dickens and Proust are house folklore; the orchestra on the square is house policy. When the Biennale needed a place to argue, it argued here.
3 · Signature & ritual
The orchestra, the supplement for sitting, the small rooms painted in the nineteenth century, and coffee priced as rent for the view. The house makes no apology for the bill, which is the honest version of what every terrace in Venice charges.
4 · What this house does not solve
Three centuries of fame have made the house a monument that tourists visit rather than a café that Venetians use — the fate of almost every institution on that square, and the exact opposite of the function it was built for.
Its economics depend on a city with a visitor problem it did not create and cannot influence; acqua alta and overtourism policy both arrive without consultation.
And an interior of this age fixes the business: the rooms cannot be enlarged, the kitchen cannot be modernised beyond a point, and the price of the coffee must carry the maintenance of a landmark.
