1 · Opening

Spago opened on the Sunset Strip in 1982 and did something no restaurant had done: it made the cook the star of the room instead of the guests.

2 · Why it matters

Before Puck, an American luxury restaurant belonged to its owner, its maître d'hôtel or its hotel. He established the arrangement that now governs half of this Part: the chef as the brand, licensed into other people's buildings.

Two mechanisms made it work. The first was Los Angeles itself — a city that photographs its dinners — and the Academy Awards catering that put his cooking in front of a global audience annually ⚑. The second was CUT: a steakhouse format precise enough to install in a Las Vegas casino, a London hotel and a Singapore resort without dilution.

The chef empires that follow in this section — Jean-Georges, Boulud, Frantzén, Romito — all operate inside the structure he proved.

Spago as the flagship room; CUT as the exportable format; the Governors Ball as annual theatre; a cooking style that made Californian ingredients luxury.

4 · What this house does not solve

A chef empire is a licence business, and licences are only as good as the operator on the other side: the founder cannot cook in twenty rooms.

Celebrity is a depreciating asset. The mechanism Puck invented has been used by two subsequent generations, and the audience now regards a chef's name on a hotel restaurant as a category rather than a promise.

And the steakhouse — the most profitable format he built — is the least distinctive thing he does. The empire is funded by the part of it that requires the least of him.
