Chefs who place kitchens inside other people’s hotels — Ducasse, Puck, Jean-Georges, Boulud — remain authors and guests. Operators who buy the hotels outright — Major Food Group with The Newbury and Villa Miami, Niko Romito with Casadonna — have crossed into the main register’s territory, and they sell nights.
The counter format that half this chapter now runs is not the invention of the chefs who made it famous. Robuchon opened L’Atelier in Tokyo in 2003 and put fine dining at a counter; Yannick Alléno’s Pavyllon carried it into hotels at scale, which is a real contribution and a different one. And the field’s outer limit is currently held by Björn Frantzén, the only chef in the world with three separate three-star houses at once — Stockholm, Singapore and, from May 2025, Dubai.
