The house documents a specific export route this Part sees repeatedly — Milan to Istanbul to the Gulf — carried by a clientele that shops in all three. Where Sant Ambroeus went west with the Upper East Side, Paper Moon went east with fashion buyers and Gulf families.
It is also a reminder that international luxury dining did not begin with the 2000s London concepts: a Milanese room was operating in Istanbul and the Gulf long before Zuma existed.
