Mott 32 opened in a bank basement in Central in 2014, named for the New York address where Chinese immigrants first settled, and designed with the density and detail of a film set.
2 · Why it matters
Mr Chow and Hakkasan built Chinese luxury dining in London and New York for Western guests. Mott 32 did it in Hong Kong first and exported outward — the same reversal the Library recorded with Jigger & Pony in cocktails.
The cooking makes the same argument: Peking duck aged and carved to a documented specification, dim sum executed at a level Hong Kong itself would judge. A house that must satisfy Hong Kong before it satisfies Las Vegas has a different kitchen discipline from one built the other way round.
3 · Signature & ritual
The apple-wood Peking duck, ordered in advance; the designed basement; a menu that reads as Cantonese with Sichuan and Beijing excursions.
4 · What this house does not solve
The design-led model dates on a design cycle — approximately a decade — and the group's newer rooms already look different from the original.
Expansion into resort and casino markets tests a kitchen discipline that was built for a critical local audience.
And Chinese luxury dining abroad is now crowded with houses making the same argument, several of them from the same city.
