1 · POSITION

Bottura is the Modenese chef whose Osteria Francescana became the most argued-over restaurant in Italy, and whose subsequent work moved deliberately outside the restaurant: Gucci Osteria above the Palazzo della Mercanzia in Florence, then Tokyo, Beverly Hills and Seoul, and Giardino 25 as the bar beside it.

2 · WHY HE IS IN THE LIBRARY

The Library admits on model. His is the fashion-house restaurant done as authorship rather than as licensing: a named chef putting his own kitchen inside somebody else’s brand, with the brand’s name first and his second, and the result reading as neither a hotel restaurant nor a celebrity outpost. Gucci Osteria is LHL-S-065 Gucci Osteria & Giardino 25 in Part X because it outgrew the building it sits in, which is the test.

3 · WHAT THIS MODEL DOES NOT SOLVE

It depends on the chef. A restaurant carrying a fashion house’s name and a chef’s reputation has two owners of its meaning and no clear answer to what happens when one leaves. Bottura’s wider projects — the refettorios — are outside what a hospitality register can assess and are not claimed here as part of the model.
