Din Tai Fung began as a cooking-oil shop in Taipei and became a restaurant in 1972. Its soup dumplings are made to a written specification — a stated number of folds, a stated weight — and reproduced identically in every location on earth.

2 · Why it matters

The Library admitted this house on an editorial decision that the record notes plainly: it is the icon of its category rather than a luxury house in the price sense.

The reason it belongs here is methodological. Every network in this section struggles with consistency; Din Tai Fung solved it more completely than any luxury operator, through specification, measurement and training — the open kitchen exists so guests can watch the standard being met.

Michelin recognition ⚑ and a global footprint built without lowering the specification make it the strongest available evidence that consistency is itself a form of excellence, which is the argument every chef empire in this Part makes and few can prove.
