Coya opened in Mayfair in 2012, at the height of international interest in Peruvian cooking, from the circle that had already built Zuma and LPM.

2 · Why it matters

The house is the clearest illustration of a mechanism this section documents: a national cuisine enters global fashion, and a luxury restaurant group converts it into a format for the international season within two years.

Its map is the map of that season — Mayfair, Dubai, Monaco, Mykonos, Marbella — and the Library records it as a member of the family of concepts serving one mobile clientele rather than as a Peruvian restaurant in the culinary sense.

Ceviche and tiradito, pisco bar, a room that turns into a party after eleven; the same guests, in whichever city the month requires.

4 · What this house does not solve

A cuisine adopted at the peak of its fashion is exposed when the fashion moves, and Peruvian food has since been absorbed into the general vocabulary.

The season-circuit strategy means the house is closed or quiet wherever the clientele is not, and full only where it is.

And a concept built by an existing group inherits recognition and originality problems in equal measure.
