Reif Othman

Reif Othman’s hospitality work moves between a neighbourhood restaurant, an experimental counter and menus prepared in other operators’ kitchens. The Singaporean chef built his best-known independent restaurant work in Dubai. His career crossed restaurant brigades, hotel dining and business partnerships before his own name appeared above a small restaurant. That sequence matters more here than a celebrity ranking: it explains why an apparently informal place can draw on the discipline of much larger kitchens. Typsy’s professional biography places his first kitchen learning with his mother, preparing food for her stall. The setting was food sold to customers, not simply cooking at home. Read as a formative hospitality experience, it joined preparation to the practical question of feeding people repeatedly and on time. 4 · THE PIZZA KITCHEN

In his CNA account, Othman recalled part-time work in a pizza kitchen at sixteen. Making something a guest enjoyed supplied an early reason to continue cooking. The later Japanese-influenced career did not begin as a narrowly Japanese apprenticeship; it developed through work in several culinary settings. 5 · LEARNING FROM OTHER COOKS

His Typsy profile identifies Violet Oon as a formative mentor. The relationship keeps another practitioner visible in a career often narrated as self-made. Learning through work is not the same as working without teachers. 6 · THE RAFFLES CONNECTION

The 50 Best interview places Othman with David Mollicone at Raffles Grill in 2007. That is a specific professional relationship within a hotel restaurant, not a claim that Othman directed all of Raffles Singapore. His subsequent restaurant authorship grew from participation in other people’s kitchens, whose leadership and institutional histories remain their own. 7 · AN EARLY DUBAI DATE THAT VARIES

⚑ Accounts place his first Dubai period at Al Mahara in Burj Al Arab, but the year varies. CNA gives 2005; FACT’s interview gives 2006. The master retains the early placement and leaves the precise arrival year unresolved. It does not turn differing recollections into an invented sequence of arrival, appointment and promotion. A contemporary interview records that Othman joined Zuma in 2009 and resigned in October 2015. By the time of his departure, his responsibilities extended beyond one kitchen to the Dubai, Abu Dhabi and Istanbul restaurants. The experience involved consistency across locations as well as the development of dishes: an important preparation for later expansion under his own name. 9 · A SUCCESSFUL OPERATOR IS NOT THE ORIGINAL FOUNDER

In that interview, Othman explicitly distinguished his next project from Rainer Becker’s Zuma concept. His contribution belongs to Zuma’s culinary and operating history, not its founding. The distinction also applies to recognition: the 50 Best account places Zuma Dubai in the extended 51–100 list during 2012–2015. That should not be rewritten as four years inside the world’s top fifty. 10 · PLAY AT THE H HOTEL

A post-opening account dates PLAY’s debut to 31 December 2015, on the H Hotel’s thirty-sixth floor. Its large dining room, theatrical setting and forty-person kitchen team represented a very different hospitality scale from the restaurant Othman would later open at Dar Wasl. The chef’s public identity emerged within a substantial collaborative operation, not a one-person performance. 11 · A SMALLER ROOM ABOVE THE LARGER ONE

A February 2017 review documents The Experience on the hotel’s thirty-seventh floor: twelve seats, with Othman cooking and presenting dishes close to guests. This was not simply a premium table in PLAY’s main room. The smaller setting changed the distance between diner and cook, and allowed a meal to be organised around a sequence rather than the choices of a large restaurant menu. Typsy’s profile also records a later role with the Twiga and Sumosan project, describing executive-chef and business-partner responsibilities. It is a separate relationship, not a reason to call Othman the founder of the Sumosan brand. 13 · THE GAP HE WANTED TO FILL

Othman described a perceived gap between expensive destination dining and a restaurant customers could revisit several times a week. His answer was a smaller, unlicensed, mid-market setting. This was his reading of Dubai’s market, not proof that affordable chef-led restaurants had never existed there. The important design decision was to make repeat use part of the brief. What’s On announced the Dar Wasl restaurant’s opening for 9 September 2019. Michelin’s later interview instead dates it to August. The year is secure; the month is not fully reconciled. A possible soft-opening explanation remains only a possibility until an opening log or contemporary operator record establishes it. 15 · A DELIBERATELY SMALL BEGINNING

The launch report described twenty-nine indoor seats, with a further thirty on a winter terrace, and a team of nine chefs and three front-of-house staff. Those are opening-stage figures, not permanent capacities. Their interest is proportional: a modest dining room was supported by a substantial kitchen commitment. 16 · CAPITAL HAD MORE THAN ONE PARTICIPANT

Michelin reports that Othman and a business partner used their savings, with kitchen and marketing responsibilities divided. Hotaru Holdings separately names Othman and Ahsan Kahlon as its 2019 co-founders. These statements support partnership, not sole ownership. They do not establish share percentages or conclusively identify Michelin’s unnamed partner. 17 · THE WORK AT THE FRONT OF THE ROOM

A June 2021 account identified Jasmine Othman as heading front of house. Her role belongs in the restaurant’s professional history, not only in a family biography. Recognition, timing and communication at the table determine whether technical cooking becomes an easy meal for a guest. 18 · WHY THE GRILL MATTERS

The Egyptian operator’s description places charcoal grilling and the use of different parts of a chicken at the centre of the kushiyaki proposition. This makes the restaurant broader than a collection of sushi rolls. The skewer provides an intelligible unit to order, share and combine. 19 · THE PREPARATION BEHIND A BOWL

Othman explained his ramen stock through his French-kitchen training: careful preparation of chicken bones followed by prolonged cooking. Michelin’s account describes an eighteen-hour broth. The everyday form of a noodle bowl therefore conceals considerable preparation; informality at the table need not mean abbreviated work in the kitchen. Emirates’ description of the Wagyu sando distinguishes the breaded fillet from an additional layer of sirloin. The construction brings different textures into a familiar handheld form. Its relevance is not a claim to have invented the Japanese beef sandwich, but the translation of an ingredient associated with formal dining into something ordered and eaten with comparatively little ceremony. 21 · BREAD AS PART OF THE RECIPE

The 50 Best interview describes bread made with Hokkaido flour and trimmed crusts reused as crumbs. The sandwich is therefore a coordinated preparation rather than a costly filling placed between incidental slices. Reusing one component within the same recipe is documented; it does not establish a measured zero-waste operation across the restaurant. 22 · PERMISSION TO BE PLAYFUL

CNA also recounts a toilet-roll-shaped dessert associated with the pandemic period. Its humour was a deliberate departure from the visual solemnity of fine dining. A playful object can make a meal memorable without changing the underlying requirement that it be well made. The episode is recorded as part of the chef’s account, not as a universal origin story for novelty pastry. 23 · THE DRAWER AT THE TABLE

Emirates describes menus and utensils kept in table drawers. This small physical choice allows part of the dining ritual to be handled directly by guests. Read as a service device, the drawer reduces the visual formality of a prepared setting while keeping what the diner needs close at hand. 24 · THE ROOM HAS OTHER AUTHORS

The same account credits Lauris Zailaa with the three-dimensional Astro Boy artwork. The named artist should remain visible beside the chef. A restaurant’s personality is produced through food, objects, graphics and service; the fact that the business bears Othman’s name does not make him the personal designer of every object within it. 25 · A NEIGHBOURHOOD DOOR

The Dar Wasl website continues to describe a walk-in restaurant with a terrace. This is a different invitation from a prepaid tasting counter: a guest can decide on an ordinary meal without first committing to a long sequence. The practical policy helps explain the neighbourhood positioning. It remains a dated website observation, not a promise that access arrangements will never change. 26 · FOUR SEATS FOR A DIFFERENT CONVERSATION

A November 2019 announcement advertised the return of The Experience in a four-seat form at REIF, with a proposed start on 18 November. Later Michelin reporting confirms the small table in operation. The old twelve-seat room at the H Hotel, the four-seat Dar Wasl version and the later Dubai Hills counter are successive configurations, not conflicting measurements of one unchanged venue. 27 · THE EXPERIMENT CAN LEAVE THE COUNTER

Othman told Michelin that well-received TERO dishes could enter the restaurant’s specials. This is a concrete link between experimental dining and a wider menu. The small table tests an idea through close interaction; the larger restaurant can then make it available in another form. That feedback loop is more informative than calling every new dish an innovation. BBC Good Food reported the Dubai Hills restaurant open in May 2023. A licensed bar, a larger room and varied seating extended the model beyond the original unlicensed neighbourhood site. This did not simply reproduce Dar Wasl at a larger size. Different visiting occasions could coexist, while the kitchen retained the recognisable REIF menu language. 29 · THE U-SHAPED COUNTER

Michelin describes TERO at Dubai Hills as a twelve-seat U-shaped counter reached through the rear of the REIF restaurant, with an open kitchen and direct interaction with the team. The arrangement puts the preparation of successive courses within the shared field of vision. Proximity matters here as an operating condition, not merely as a photograph of an impressive kitchen. 30 · A FORMAT THAT KEEPS CHANGING

⚑ TERO’s own site describes quarterly themes developed by Othman and his team. Hotaru describes monthly ten-course menus, while Michelin describes eight- or twelve-course versions with monthly themes. The sources do not define one stable present-day specification. The consistent idea is a changing, themed dinner; exact cadence, course count and the chef’s personal attendance require a dated booking offer. 31 · PRIVACY IS NOT THE SAME AS A CHEF’S TABLE

The Dubai Hills website separately describes Denka, a private dining pod for twelve that can divide into two spaces of six. It should not be confused with the twelve seats at TERO. A private party chooses separation from the main room; a counter guest chooses proximity to the kitchen. Equal capacity does not make these the same hospitality product. 32 · A KOREAN-INSPIRED PARALLEL

At Hoe Lee Kow, Michelin describes Korean-inspired cooking in a relaxed setting intended for families and friends. It provides another expression of the chef’s preference for informal settings and recognisable flavours, rather than extending the word Japanese over every project. 33 · RECOGNITION WITH THE RIGHT LABELS

The original REIF received a Bib Gourmand in Dubai’s 2022 Michelin selection. The 2024 announcements added REIF Dubai Hills and Hoe Lee Kow among the new Bib Gourmands. These are restaurant distinctions for good-value cooking, not Michelin stars awarded personally to Othman. Their relevance to this story is the recognition of accomplished cooking within comparatively informal formats. 34 · AN AWARD FROM OTHER CHEFS

Othman received the Chefs’ Choice Award at the inaugural MENA’s 50 Best Restaurants in 2022. It records recognition from peers, a different kind of evidence from a restaurant inspection or a ranked place. It belongs in the chronology, but the account of his work rests on the restaurants and their methods rather than on converting an award into proof of invention. 35 · THE FOOD-MARKET VERSION

Time Out Market’s REIF outlet places the menu within a shared food destination rather than a self-contained restaurant. The customer encounters a choice of counters and a common setting. Its contemporary vendor page includes familiar REIF dishes, but their availability does not reproduce TERO’s extended interaction. 36 · AN EXCHANGE RATHER THAN A SOLO PERFORMANCE

For its 2023 Chefs on Tour programme, Time Out documented menu development by Othman and Stephen Gillanders of Chicago’s Valhalla. Its 14 March release advertised a Dubai dinner for 19 March. The joint preparation is documented; this announcement alone is not a post-event report. Gillanders retains his own authorship instead of becoming an unnamed contributor to a Reif-branded evening. 37 · THE FRANCHISE IN CAIRO

Michelin dates the first international REIF franchise to Cairo in December 2021. The Egyptian website identifies Baky Hospitality as the franchise operator. That gives the expansion a business structure: a culinary name and concept were carried into a restaurant run by a local partner. It is not evidence that Othman personally staffed every station or owned every associated property. The 2026 Highest Climber profile identifies Talal El Meligy as leading the Cairo kitchen, after six years at Kazoku. It also describes a substantially larger restaurant than the original Dar Wasl launch. The local chef is part of the explanation for how a travelling concept works: maintaining and interpreting a menu in another kitchen requires a named practitioner, not only a licence. 39 · A CAIRO RESULT, NOT A DUBAI RESULT

In MENA’s 50 Best Restaurants 2026, REIF Japanese Kushiyaki in Cairo reached No.20 and received the Highest Climber Award after rising twenty-seven places. This is an outlet-specific result. It cannot be inserted into the Dubai restaurant’s ranking history as though all restaurants sharing the name were a single assessed establishment. 40 · A SEASONAL COASTAL EXPRESSION

The Marassi website describes a June-to-October season and credits Alchemy Studio with the interior. The setting connects the brand to a coastal leisure destination, rather than simply another year-round urban dining room. Both the seasonal operating pattern and the independent design credit matter. 41 · A RETURN TO SINGAPORE AS A RESIDENCY

Conrad Singapore Marina Bay published a REIF programme for 1–30 September 2025. The limited dates distinguish a hotel residency from the opening of a permanent Singapore branch. It was a way of bringing the chef’s Dubai-developed food back to Singapore through an existing hospitality institution, without making a new permanent restaurant the necessary condition of that encounter. 42 · TWO OFFERS INSIDE THE HOST HOTEL

Conrad’s programme distinguished a terrace pop-up from a takeover of the outdoor grill at Oscar’s, incorporated into the buffet offer. The host hotel therefore supplied more than an address. It changed the conditions under which the food was selected, priced and served. The same visiting chef could contribute to different meal structures within one property. 43 · A NOODLE CONCEPT WITHIN ONE&ONLY

One&Only One Za’abeel’s Culinara page identifies SIO with Othman, alongside separately credited concepts from other chefs. This is a specific contribution to a hotel’s dining collection, not authorship of the whole hotel or food hall. It extends his work into luxury hospitality while preserving the distinction between a chef’s concept, a shared dining destination and the host operator. 44 · WHAT CAN TRAVEL WITHOUT THE DINING ROOM

Hotaru presents Kushi as a cloud-kitchen concept combining dishes from REIF and Hoe Lee Kow. Here the transportable element is the prepared food, not the counter conversation, table drawer or room. The distinction is useful: growth in culinary distribution does not necessarily mean reproduction of the complete hospitality experience. 45 · CRISP AND A DIFFERENT PART OF THE DAY

An opening report dated 9 June 2026 places CRISP, Othman’s bakery concept, within REIF Dubai Hills. The Copenhagen bakery influence is presented as his recollection of a 2024 residency. Bread and pastry introduce breakfast, takeaway and repeat daytime visits into a site associated with lunch and dinner. This is a change in use, not evidence of inventing a baking tradition. Rabih Fakhreddine’s 2025 YUBI announcement names Othman as his partner and describes their work developing the concept together. It is another reason not to read a public chef’s name as shorthand for an entire company. The announcement establishes the partnership as publicly described by a participant; it does not disclose the contractual division of ownership, design or day-to-day management. 47 · JOINING AN EXISTING LONDON RESTAURANT

The Caterer reported Othman’s appointment as chef-partner at CLAP London on 25 June 2026. This is a later creative and business relationship within an existing restaurant, not its original founding. At the research cut-off, CLAP London advertised Othman’s summer menu as available and a full menu as forthcoming in October. The latter remained future on 24 September 2026. CLAP Dubai separately published a 7 September Hirugozen business-lunch update in collaboration with him. A dated menu offer is more precise evidence of work than a generic list of affiliated venues. The clearest documented reproduction of Othman’s concept is the REIF franchise operated by Baky Hospitality. Elsewhere, a host hotel, shared market or delivery kitchen reproduces selected dishes or parts of a format. These are not interchangeable claims of influence. No independently demonstrated chain of unrelated restaurants copying a uniquely Othman-authored hospitality model was established; the evidence supports transmission through named partnerships. ⚑ Early career dates and the first REIF opening month differ between sources. Accounts of financing and corporate co-founding do not disclose shareholding. TERO’s published formats vary, and brand pages can outlive a season: Marsa Boulevard’s page states that it is closed for summer. Awards are dated and outlet-specific; future menus remain announcements. A full education record, recipe-development archive, franchise agreement and independently audited commercial outcomes were not reviewed. Its admission is recommended; Zuma is retained as an earlier workplace, not substituted as a concept Othman founded.
