Xin Rong Ji began in 1995 as Zhang Yong's small seafood business in Linhai, within the Taizhou region of Zhejiang. Its later development into a restaurant group carried that coastal culinary identity into major cities. Fish and regional produce remain central to the story, even when the dining room is far from the coast that supplied its original reference. [1]
2 · A REGIONAL FISH BECOMES A SIGNATURE
The 50 Best account of Zhang identifies braised yellow croaker among the group's signature preparations. This is a useful way into Xin Rong Ji: a specific ingredient and cooking tradition can express luxury without requiring a menu to abandon its regional origins. At Xinyuan South Road, Michelin describes an elegant but relaxed room in a contemporary Chinese style. The menu concentrates on Taizhou food and fish from the East China Sea. The guide also identifies a location-specific preparation: baby Peking duck, available by advance order. Another cited dish combines duck, fish maw and taro, introducing a different texture and register alongside the seafood. [2]
4 · RECOGNITION WITH AN ADDRESS
The inaugural Michelin Guide Beijing 2020 awarded three stars to the Xinyuan South Road restaurant. That distinction gave a precise address to the group's high-end reputation. It also demonstrates why the branch name matters: a restaurant collection may share an approach and much of its menu while individual kitchens receive different evaluations.
