Maison de la Truffe opened on the Place de la Madeleine in 1932 and has since sold, cooked and shipped one thing: truffles, and the products that carry them.
2 · Why it matters
The Madeleine is the square where French luxury food organised itself — Fauchon, Hédiard, the caviar houses, this one — and the truffle house is the most extreme specialisation on it.
The model is worth recording because it inverts the logic of every other maison in this section: instead of a technique or a name, the house is built on an ingredient it does not control, whose supply is seasonal, weather-dependent and prone to fraud. Running a luxury business on that basis requires an authentication function as much as a kitchen — the house is, in effect, a guarantor.

Whole truffles by weight under glass, the tasting counter, the shaved dishes in the adjoining restaurant, and the ritual of the scale.

Supply is agriculture: a bad season cannot be managed by hospitality skill, and prices move against the house without warning.
