The group's significance is culinary rather than commercial. Where Novikov exported a format, White Rabbit developed a kitchen — regional Russian ingredients, historical dishes reconstructed, a chef with a public voice — and secured international recognition for it ⚑.
That project mattered for a country whose luxury dining had previously been defined by imported cuisines. The Library records it as the first serious attempt to place Russian cooking in the same conversation as Nordic, Basque or Peruvian.
