Pierre Hermé came out of Fauchon and Ladurée and then built a house on a premise borrowed from the industry next door: that a pâtissier is an author who releases collections.
2 · Why it matters
The consequences are visible in every luxury hotel pastry programme in the Library. Before Hermé, pâtisserie was a repertoire; after him, it is a practice with signatures, seasons and named creations — Ispahan, the flavour pairings, the annual releases.
He also inverted the geography: the first boutique opened in Tokyo, not Paris. A French maison that begins in Japan and returns home is a distinctly modern sequence, and it explains why the house reads as international rather than Parisian.

4 · What this house does not solve
The collection model demands constant novelty, which is the opposite of what Angelina and Ladurée prove works over a century: two products, unchanged.

And his best inventions have already been absorbed by the industry: flavour pairing as method is now taught, which means the author competes with his own students.
