Nusret Gökçe opened in Istanbul in 2010. In 2017 a video of him salting a steak with a particular flourish circulated globally, and within two years the restaurants were in a dozen countries.
2 · Why it matters
The Library records this house because it poses a question the Part must answer honestly: can attention alone build a luxury hospitality brand?
The evidence is mixed and worth stating without sneering. The expansion was real, the locations are in luxury districts, and the operation feeds enormous numbers of people at very high prices. Equally, the house has become a byword for pricing controversy ⚑, and its critical reception as a restaurant has been poor in most markets.
What is not in doubt is the mechanism: this is the first internationally significant restaurant brand created by a gesture rather than by a kitchen, a room or a clientele. Reported interest in acquiring a hotel property ⚑⚑ would make it the first to cross into the main register by that route.
