1 · Opening

Enrico Buonocore opened Langosteria in Milan in 2007 with a simple proposition: the best fish available, cooked as little as possible, at prices that assumed the guest understood why.

2 · Why it matters

The house is now the restaurant partner of LVMH's hospitality arm — the rooftop at Cheval Blanc Paris is Langosteria, and the group holds a stake ⚑. That makes it a rare case of a chef-owner's house entering a conglomerate's hotel programme as a partner rather than as a tenant or a licence.

Its locations also map a specific Italian season: Milan in winter, Paraggi in summer, St Moritz for the snow. Where Zuma follows international money, Langosteria follows an Italian calendar — a smaller, more defensible position.
