Mosu

Mosu has crossed both an ocean and a break in service. Sung Anh, also known as Ahn Sung-jae, moved his restaurant from San Francisco to Seoul in 2017. It subsequently reached three Michelin stars in the 2023 and 2024 editions. After closing in 2024, it reopened at a new Seoul address in March 2025 and received two stars in 2026.[1]

1 · POSITION

Mosu has crossed both an ocean and a break in service. Sung Anh, also known as Ahn Sung-jae, moved his restaurant from San Francisco to Seoul in 2017. It subsequently reached three Michelin stars in the 2023 and 2024 editions. After closing in 2024, it reopened at a new Seoul address in March 2025 and received two stars in 2026.[1]

2 · A PORTABLE AUTHORSHIP

The San Francisco restaurant had already earned one star in the 2017 guide. The move to Korea therefore carried an established culinary project into a different supply landscape and dining culture. Mosu’s identity cannot be reduced to one building or one rating: the continuity lies in the chef and restaurant, while each address has its own history of service and assessment.[1, 2]

3 · PRECISION THROUGH SUBTRACTION

In its account of the reopened restaurant, Michelin describes a movement towards restraint and seasonal Korean produce. Steamed tilefish in anchovy broth exemplifies that direction. Other dishes, including an abalone taco, sesame tofu and burdock tarte, use distinct textures and formats without requiring a single national label to explain the whole menu. The ingredients and their treatment provide the more useful description.[1, 3]

4 · TWO WAYS TO INHABIT DINNER

At the address on Hoenamu-ro 41-gil in Yongsan, the dining spaces offer different points of attention. One floor lets guests observe the chefs; another opens towards the sunset. Wine pairings and attentive service connect these settings to the sequence of dishes. The restaurant thus offers both proximity to the work and some distance from it, within the same evening.[3]

5 · ⚑ CANDOUR

⚑ The former three-star rating should not be carried automatically across the closure. Two stars is the documented 2026 result. Michelin’s retrospective dates the San Francisco opening to 2015, but contemporary Tablehopper reporting announced it for 16 February 2016. The contemporary report is preferred for that milestone; guide editions, relocation and reopening are dated separately.[1, 4]
