1 · Opening

Al Bicerin has stood opposite the Consolata sanctuary since 1763, occupies one small room, and is known for one drink: coffee, chocolate and cream, in layers, in a glass.

2 · Why it matters

It is the smallest business in Part X and one of the oldest, and it is here because of the relationship between those two facts. The house never expanded, never franchised the drink and never left the square, and is consequently still trading under something close to its original proposition.

Set against Ladurée or TWG in Group III, it is the control case: the same category, the opposite strategy, and a survival record neither can match.

3 · Signature & ritual

Eight marble tables, the drink served in a glass so the three layers can be seen, and a room that has not been enlarged in two hundred and fifty years.

4 · What this house does not solve

A single-product house has no protection when tastes move, and no second line to carry a bad decade.

Its capacity is fixed by the room, so growth is impossible without abandoning the thing being sold.

And a drink cannot be trademarked into scarcity — bicerin is served across Turin, and the house's only defence is that it was first.
