Dalloyau traces its house to 1682 and to service at the court of Louis XIV, which makes it the oldest entry in this Part and older than every hotel in the Library.
2 · Why it matters
The house records a transition that the Library sees nowhere else so clearly: from officier de bouche — a court role, feeding a monarch — to a commercial maison serving a city. When the monarchy ended, the skills did not; the Dalloyau line opened as a Parisian house in the early nineteenth century and has operated since.
Its second claim is the Opéra cake, created in the 1950s and named for the Palais Garnier ⚑ — one of the few desserts of the modern era with a documented author and a house of origin, in a discipline where almost nothing is attributable.
And its traiteur business is the ancestor of an entire hospitality category: catering as a luxury service, which is how most great houses of Paris fed their private clients before hotels took the role.

4 · What this house does not solve
Antiquity is an asset only if the guest knows it. Dalloyau's three and a half centuries are largely invisible in a market where its neighbours market history harder and better.
The traiteur model that made the house is now the least glamorous part of luxury catering, and the most competitive.
And its authorship of the Opéra is contested by another Parisian house ⚑ — a reminder that even documented pastry invention rarely stays uncontested for long.
