Contribution to hospitalityThe martini trolley — and the proof that a hotel bar can become a destination in its own name

1 · Opening

The Connaught Bar opened in 2008 in a hotel that had existed for a century without one of note. Within a decade it was being named the best bar in the world, and guests were booking the hotel because of it.

2 · Why it matters

The Library's rule is that hotel-native institutions enter as cross-references inside the article of the house that holds them. This bar is one of the few exceptions, and it defines the test: it created a school, it is recognised entirely outside the context of the hotel, and it is associated with the name of its bartender rather than of the building.

Agostino Perrone's room did two things. It made the bartender the author — a shift that has changed hiring, pay and status across luxury hotels — and it turned service into performance without theatre: the martini trolley is wheeled to the table, the drink is built in front of the guest, and the ritual is the product.

Every hotel group in the main register has since tried to build one of these. Almost none has succeeded, which is why the exception is recorded.

3 · Signature & ritual

The martini trolley and its bitters selection; a Cubist-influenced room in silver leaf; a team whose names guests know.

4 · What this house does not solve

A bar built on one bartender's authorship faces the same succession question as a chef's restaurant, and hospitality has no established way to transfer that kind of credit.

Global recognition brings global demand: a room of this size cannot serve the audience its reputation creates, and the regulars who made it are displaced by visitors with a list.

And it remains, structurally, a department of a hotel. However famous the bar becomes, its hours, staffing and future are decided by an owner whose priorities are the building.

7 · LHL story

“The Trolley” — A hotel with a century of history had no bar worth naming. Then someone started wheeling a trolley of bitters to the table and building the martini in front of the guest, and the hotel became a place people book for the drink.
