1 · Opening

In 2013 Alain Ducasse opened a bean-to-bar chocolate manufacture in a former garage in the eleventh arrondissement — the first serious chocolate production inside Paris in generations.

2 · Why it matters

The house is the clearest instance in this Part of a chef moving upstream. Most culinary maisons buy couverture; Ducasse decided the hotels and restaurants of his group would use chocolate he made himself, from beans he sourced, in a factory guests could see through the window.

It also completes the constellation the Library records around him: three-star dining rooms inside hotels of the main register, Benoît as the historic bistro, the chocolate manufacture as production, and a coffee roastery on the same logic ⚑. Ducasse is the most vertically organised hospitality author in the Library, and this entry is where the vertical touches the ground.

3 · Signature & ritual

Bars wrapped in patterned paper, a visible workshop, and single-origin production presented with the vocabulary of a kitchen rather than a confectioner.

4 · What this house does not solve

Manufacturing is a different business from restaurants, with capital, margins and logistics that hospitality experience does not prepare an operator for.

The house depends entirely on the founder's name for its price position: the chocolate must be excellent, but it is bought because of who made it.

And bean-to-bar has become a crowded artisanal category since 2013 — the position that was distinctive is now a genre with dozens of Paris entrants.
