1 · Opening

Riccardo Giraudi's family traded meat. In 2005 he opened a restaurant in Monaco to sell it directly, and built the menu around tacos, buns and sandwiches made with cuts normally reserved for steakhouses.

2 · Why it matters

Beefbar inverted a luxury convention. The steakhouse presents beef as ceremony — the trolley, the grades, the sides; Beefbar presents it as street food at the same price, which turned out to be exactly what a younger luxury clientele wanted.

Its Paris room, in a restored Art Nouveau space ⚑, also demonstrates the format's adaptability: the same menu reads as casual in Monaco and as architectural in Paris.

The supply chain matters too. A restaurateur who comes from trading has an advantage in a category where the product is the entire proposition.

Kobe tacos and beef buns; the raw display; rooms that vary dramatically in design while the menu does not.

4 · What this house does not solve

A format built on premium beef is exposed to sourcing costs, currency and the growing argument about meat itself ⚑.

Casual presentation at high prices is a fine line: guests forgive it in a resort and question it in a city.

And the concept is straightforward to copy — the difficulty is the supply relationship, which is invisible to the guest deciding where to eat.
