2 · THE HOST’S PROFESSION

The obituary published by L’Orient-Le Jour described a proprietor who considered himself an ordinary cook but brought considerable culinary and wine knowledge to the business. That distinction identifies his work precisely. He was responsible for the character of the house and its welcome, rather than claiming sole authorship of the food produced by its kitchen. [1]

3 · CONTINUITY BEYOND PARIS

The Tour’s history credits Claude’s tenure with a second restaurant in Tokyo. Carrying the name abroad presented a different problem from preserving the Paris dining room: the restaurant’s identity had to remain intelligible without its original view over the Seine. [3]

4 · A GRADUAL HANDOVER

Contemporary reporting described a symbolic transfer to his son André in 2003 while Claude remained closely in charge. His death in June 2006 completed that generational passage. Le Monde also recorded the Michelin setbacks of his later years. The long tenure was a working history with changes in critical standing, not an uninterrupted sequence of honours. [1, 2]

5 · ⚑ CANDOUR

⚑ Sources describe succession differently: the family timeline stresses 2006, while the contemporary obituary records the earlier symbolic handover. Both can be retained if the distinction is stated. This entry does not treat personal fame as proof of consistently successful restaurant management, or inherit present-day distinctions backwards into Claude’s entire career.
